  • 1 can organic great northern beans 15 ounces
  • 1 Garlic Clove
  • cup ¼onion I often use shallots in my cooking
  • cup ½carrots
  • cup ⅓celery
  • 1 tbsp olive oil
  • 2 cups Pacific Gluten Free vegetable broth
  • tsp ⅛fresh rosemary
  • tsp ¼fresh parsley or Kale
  • tsp ¼fresh thyme
  • tsp ½sea salt

  • cup ⅓celery
  • 1 tbsp olive oil
  • 2 cups Pacific Gluten Free vegetable broth
  • tsp ⅛fresh rosemary
  • tsp ¼fresh parsley or Kale
  • tsp ¼fresh thyme

Instructions
  1. Drain white beans, rinse, and dry.
  2. Mince garlic. Dice onions, carrots, and celery.
  3. In a stock pot, heat oil over low to medium heat. Sauté onions for 2-3 minutes. Add carrots, celery, and garlic. Sauté for an additional 4-5 minutes or until vegetables start to become soft.
  4. Add vegetable broth, beans, and all herbs and spices. Simmer covered for 20-30 minutes stirring occasionally.
  5. Remove from heat and serve or chill for later.
