Nothing like orange and cinnamon together in a little bite-sized donut hole and it's gluten/wheat free! Try these for a little sweet treat! Oh, why not just make it a once a year holiday tradition! Betchya can't eat just one! Moderation please or you'll get me in trouble!

Ingredients
- 1 orange zested
- 2 cups coconut palm sugar or powdered stevia from Sugar in the Raw
- 1/4 teaspoon ground cinnamon
- Bob Red Mills Gluten Free 1 To 1 Baking Flour Love this new flour mix! Already used it for my Pecan Bars and loved the flavor and texture of the crust! It doesn't have the bitter taste that the Bob Red Mills GF All Purpose flour does. Picked it up at HEB
- This flour mix is Made with: Sweet White Rice Flour Whole Grain Brown Rice flour, potato starch, Whole Grain Sweet White Sorghum flour, tapioca flour, xanthan gum.
- 1 cup water
- 6 TBSP grass fed butter
- 2 tsp coconut palm sugar or powdered stevia will work too
- 1/4 tsp baking powder
- 3 pasteurized eggs
- 1 Cup Bob Red Mills 1 To 1 Gluten Free Baking Flour
- Grape Seed oil for frying

Instructions
- Combine the water, butter, salt and sugar in a saucepan. Bring to a boil, stir to combine. When butter is melted, add the flour and baking soda, stir to bring together into a ball. Turn off the heat and allow the dough to sit for 5 minutes to cool slightly. Add eggs one at a time to the dough and stir to combine completely before adding the next egg.
- Heat oil to 375 degrees.
- Use a small ice cream or cookie scoop, scoop about 2 TBSP of dough into to the oil carefully. Cook them in batches without overcrowding the pot. Turn the doughnuts over when the downside is slightly browned. Cook until opposite side is browned and remove from oil with slotted spoon. Transfer the hot donuts to the paper bag and shake to coat with orange sugar. Serve immediately.
- Variations:
- Glaze: 1 1/2 cup powder sugar 2-3 TBSP water (1 TBSP at a time) Or melt gluten-free chocolate chips with a little coconut oil and dip the holes or sprinkle with organic powdered sugar (Note: Organic Powdered Sugar has tapioca starch, not corn starch!)
