Gluten Free Sausage Balls
Every holiday my mom makes Sausage Balls. When I had to go on a Gluten Free diet it was hard having to give these up during the holidays! Now I make them Gluten Free when I visit! These gluten-free sausage balls are also a quick breakfast on the go or store in the fridge as a high-protein snack. They are quick and easy, and low in yeast! Further, chickpea flour is an excellent source of magnesium, as well as thiamine, and potassium.
Baked Coconut Shrimp
Paula Dean’s son, Bobby, is cooking up some healthy dishes on Cooking Channel! One of our favorites is Coconut Shrimp! I’m trying this baked version this week, modified Gluten Free! Try it as an appetizer for the holidays!

Spinach Queso Blanco Cheese Dip
This Spinach Queso Blanco from The Homesick Texan’s new cookbook brings some green into the mix via baby spinach sautéed with garlic and roasted Anaheim chiles. Buy a chunk of white American cheese from your grocery store deli for the best flavor and meltable texture. Fresh pico de gallo brings a little juicy crunch to the warm, gooey queso, and avocado lends extra silkiness. Tortilla chips are mandatory for dipping.
Gluten Free Lady’s Salsa
Who doesn’t love salsa?! We had a bumper tomato crop this year early so I decided to make salsa. This taste better than the Mexican restaurants and it’s all from our garden except the organic onions! And this is alkaline foods too!
Ok, I am going to try and go to memory because when I make stuff like this it’s a little of this a little of that! In other words, I EYE ball it, baby! ha!
Everything got thrown into my big iron stock pot!
I used about 8 large tomatoes chopped up and then added a few smaller ones after just because it looked like it needed a few more.
Half an onion chopped plus a small bag of some I had left over from another cooking extravaganza!
Green Chile & Cheese Appetizer
Who’s looking for a very easy peezy cheezy appetizer to take to a holiday party or potluck coming up? I had this at one of the Christmas parties we attended last week. I was so excited to see a gluten free choice! If you have an issue with dairy, however, this may not be your friend!
Ok, gang, I haven’t made this yet! So going from memory! But this one isn’t for rocket scientist chefs!! It’s for busy people who need a quick dish! This one is so good and was a big hit at the party!
