Crispy Gluten Free Onion Rings

Just came across this recipe for crispy onion rings at an online video with Chef John and modified them Gluten Free… and I’ve left his blog link for my foodie readers! John says …”this onion rings recipe is so easy, and so amazingly crispy, you can now make up for all those years of deep-fried denial by making these at home.”

Hey foodies, not sure about you but we love, love, love onion rings! And I’ve got to have them gluten free and although I’ve found places that have GFree fries, just haven’t found any restaurants or fast food places (which by the way I haven’t been to fast food places in over five years!) that make Gluten Free crispy onion rings that’s for sure! My recipe makes them ok, but they turn soggy! Not Chef John’s! Be sure to Check out his video to literally ‘hear’ how crispy these are!

I’m making some this weekend so will take a photo of my own to post here! 🙂

So now we can enjoy onion rings too without worrying … Here’s my small tweaks that turn these crunchy delights into Gluten Free crispy wonderful treats and no one will even know they are gluten free!

Gluten Free Zucchini No Crab Cakes

These veggie delights are like little crab cakes with NO crab! Great way to cook up zuchinni from the garden when you run out of ideas! They are delicious and make a great party food! Your guest will love them!

We harvested a crop from our Zuchinni’s before the dreaded Squash Borers came! We’ve steamed it, fried it, grilled it, and made a casserole! We still have one Zuchinni plant hanging on and producing! So far so good! Here’s an awesome and quite tasty recipe made from our last crop before these critters got hold of our plants! We’re not giving up! Planting a new crop in the fall!

Stuffed Tomatoes on the Beach!

Saw these little yummy delights made on the Cooking Channel by one of my favs David Rocco Dolce Vita in Italy where he made these right on the beach with a bowl, whisk, small knife and a spoon! A healthy and yummy protein treat to hold you through to lunch or dinner! Besides I love anything Italy and David are such a cutie! Made these last night and they are incredibly delicious! They taste like a tuna sandwich without the bread! First time I’ve made homemade mayo! So easy! My husband wolfed them down! Next time will make them with crab or shrimp! Yummie good and healthy too!
