Indian Masala Omelette

I am really getting into Indian cooking ever since watching the movie ‘Today’s Special’ on Netflix about a sou chef who has aspirations to go to Paris as an apprentice to a famous chef and suddenly finds himself running his father’s Indian restaurant and he has no experience cooking Indian food. Great flick! Indian cooking is actually quite healthy and mostly grain/gluten free too so it’s right up my alley for learning! Besides, I have a passion for cooking with herbs and spices!!

Grain-less Carrot Cake Muffins

Although I have not had wheat on purpose in over 8 years, in the last few years it’s become obvious that my body just doesn’t process any type of grain too well including rice and especially corn. Of course, it has been another challenge but I cannot argue with my body when it is screaming at me to stop eating certain foods! I started eating Lindsey and Daniel Crouch’s grainless superfoods over a year ago and have fallen in love with their foodies and so has my body! I use their bread mostly now instead of any other bread and they now have their guiltless flour blend to make all sorts of goodies like these grainless Carrot Cake muffins which are on my bucket list!

Paleo Chocolate Glazed Doughnuts

Who doesn’t like a doughnut every now and then right? To tell the truth I haven’t had a doughnut in like 10 years! Regular doughnuts may taste good but are probably one of the worst foods on the planet besides pizza! Check out this delicious healthy doughnut recipe!

Excited to make some of these for my taste testers this weekend. And I’m not saying a word about them being healthy, Paleo, gluten/wheat/grain free, etc. Mums the word! Will let you know the verdict!

Since deciding to start eliminating all grains from my diet (because I feel so much better when not eating grains which means corn and rice in moderation), I’ve lost down to about 128 lbs which is the lowest weight for my body in like 35 years. I wasn’t trying to lose weight, just wanting to feel better with more focus and clarity in my brain. Consequently, my stomach has really shrunk though!

I’ve actually maintained my weight for over five years just eliminating gluten/wheat. I was always 25 to 30 lbs heavier in the past before eliminating gluten/wheat and had that fat wheat belly. Every now and then I eat too much corn and/or rice within a few weeks and can tell a huge difference in how I’m feeling. More foggy brain, more stomach issues, headaches, fatigue, some joint pain.. so off I go again.. how about you? Do grains affect you in any negative way? Keep a food diary and listen to your body. It will tell you how it feels.. meanwhile, have a healthy doughnut and feel the difference in this one and a Krispy Kreme!
