Amazing Gluten/Wheat Free Blueberry Muffins

These gluten/wheat free blueberry muffins are amazingly good! They’re made too with powdered Stevia, plain yogurt, and coconut oil! Your kids will love these little healthy anti-oxidant bites! Just don’t tell them they’re good for them! 🙂

Gluten Free Peach Cobbler

This is my version of the old-fashioned peach cobbler my grandma used to make only modified gluten/wheat free and using Powdered Stevia instead of white sugar. Who doesn’t love peach cobbler anyway?

Making gluten/wheat free pie crust is a bit of a challenge. It’s a lot easier when you press the crust into your pan. I had to make another batch of dough to add more to the top and did roll it out and cut into strips. I used a spatula to lift the dough off the counter. It may not be the prettiest cobbler crust but it sure tastes yummy!!! Especially with Almond Milk Vanilla ice cream on top! 🙂

Easy Peasy Lemon Pie w/Stevia

Just made the most incredible gluten/wheat free Lemon pie WITHOUT using that yucky sweetened condensed milk which is full of sugar and who knows what all else! I used Stevia instead of regular sugar! So easy and it actually reminds me of Key Lime pie!

Topping for pies, cookies, brownies, milkshakes, etc. It consists mostly of milk and cream, which can be high in fat and cow’s milk isn’t good for humans. So many people are allergic to dairy. There are dairy alternatives though like almond milk ice cream. Almond Milk ice cream tastes just as good as one made from dairy milk. It’s also much healthier, less expensive and tastes even better especially when you make your own at home! And you can add fruit and berries to make it even more delicious and healthy! Homemade almond milk ice cream is not that hard to make, so you can have your right stuff treat and eat it too!

Mocha Chocolate Trifle Mousse

OMG! Cannot even express to you how incredible this dessert is!! No time for dieting now gang! You’re gonna win some fans over with this one! Who doesn’t like chocolate, strawberries, and Kahlua? This is very easy and quick to make too and so so good! Was a big hit at the potluck!

Tools: Kitchen Aid Mixer or regular mixer, Pampered Chef measuring bowls (they sure do come in handy to put ingredients in to save time), Pampered Chef glass Trifle Bowl. If you don’t have one you can do half this recipe and make it in a springform pan and keep it in the frig overnight to set up even more like a cake.) I’ve made this dessert both in a springform pan and as in my Pampered Chef Trifle bowl.
