Slower Cooker Beef & Bean Chili

Burr, it’s cold outside! Warm up with this comfy flavorful slower cooker recipe. Chili and slow cooker go together like peas and carrots. It needs that long, slow simmer to develop flavor, and with a Crock Pot, you get that while also being able to leave for the day or just stay in where it’s warm and multi-task while your delicious family meal is simmering away!

Italian Garden Casserole

This recipe is from Better Homes & Gardens. I modified it gluten free. If you happen to be Vegan and do not eat cheese just omit it and substitute veggie broth for the chicken broth.

Paleo Refried Rice

Paleo Refried Rice

Since eliminating grains lately I’ve been getting more into Paleo cooking and absolutely loving everything I’m learning about this way of life and cooking such delicious healthy foods! One thing I really miss is RICE! Especially refried shrimp rice!! Now I can have it without my gut being upset by grains! My newest addiction and […]

Grain Free Chick-fila-A Nuggets

I used to love Chick-fila-A’s nuggets over their small side salad but had no idea what the ingredients were in these little gems! Oh my gosh, no wonder I was sick for so long with migraines, etc. Someone at our church has a young daughter who was also told she is allergic to gluten/wheat so I’ve been speaking with and encouraging him about this, sharing recipes, etc., and he just told me she recently ate some Chick-fila-A nuggets and was really sick! She loves them so much and I did too but have not eaten them or any fast food in over 9 years! So determined me set out to google these nuggets and found several grain-free recipes. I’m sharing the one I plan to make below.

According to Russ Crandall with Primal Palate – http://www.primalpalate.com/paleo-recipe/gluten-grain-and-garbage-free-chick-fil-a-nuggets/ here’s the ingredients in Chick-fila-A nuggets. You decide if you want this junk in your body or your kid’s body! The MSG alone gives me a terrible headache! They use it for flavoring and it’s addictive! Hmmm, no wonder I had such a hard time giving these up! Not anymore gang!! Teehee! Where there’s a will there’s away!

100% natural whole breast filet, seasoning (salt, monosodium glutamate, sugar, spices, paprika), seasoned coater (enriched bleached flour [bleached wheat flour, malted barley flour, niacin, iron, thiamine mononitrate, riboflavin, folic acid], sugar, salt, monosodium glutamate, nonfat milk, leavening [baking soda, sodium aluminum phosphate, monocalcium phosphate], spice, soybean oil, color [paprika]), milk wash (water, egg, nonfat milk), peanut oil (fully refined peanut oil with TBHQ and citric acid added to preserve freshness and Dimethylpolysiloxane an anti-foaming agent added)

Here’s the recipe I plan to make from Steph below at Stupid Easy Paleo.

And according to her readers, this recipe is a huge hit! Kid’s gobble them up and so do people who are not even gluten-free or eating grain free! You can use a salt and water brine if you do not like pickles. I happen to love pickles and apparently that is the real secret to this recipe’s closeness to Chick Fila’s nuggets! They brine their chicken in pickle juice! Who would have thought? I’ve always brined my chicken and wings in the salt water. You also need to brine the chicken pieces at least 4 hours.

Ok, I’m off to buy some chicken breast, from Whole Foods without all the antibiotics, hormones, corn and junk in it! Pasture-raised! Every time I eat chicken from HEB I get sick! Look at kids today too who are reaching puberty at like age 9 and 10 and some even earlier! Go figure!

Soon as I have these made will post my photos! Meantime you are welcome to visit Russ or Steph’s website to see their photos of these little delicious morsels!

Gluten-Free Fried Chicken Wings

Gluten-Free Fried Chicken Wings

My famous gluten-free chicken wings! Everyone loves these and I make them so much for church potlucks that people keep asking me where’s the recipe so finally put it here on the website!

These wings have become so well known to my church friends that one of them who does Catering even asked me to make them for one of her Celiac clients since my kitchen is 100% gluten-free.

Sue’s Gluten Free Lady Lemon Garlic Chicken

This chicken dish is so delicious and very quick and easy to prepare! It goes great with the side salad. Great Valentines dinner! Your date will love you! Oops, except for the garlic! LOL!

I found this recipe for Lemon Chicken on the Food Network. It’s a recipe from Rao’s in New York that I’ve tweaked just a bit to our liking. He doesn’t use garlic in his but I use garlic in all my cooking so in it goes! This dish is so delicous and easy to make! Those who love lemon, garlic and chicken are gonna love it!
