Roasted Yellow Baby Gourmet Carrots

The carrots can also be tossed together with sliced red onions, fresh rosemary, olive oil, salt, pepper, and garlic pepper, and then roasted until all are nicely caramelized.

I’m so loving pulling these little yellow baby carrots out of the garden and cooking them up! Aren’t their green tops pretty? They are so so good and loaded with vitamins and minerals, see below!

Scalloped Potatoes and Ham

I had my women’s group last evening so made a smaller version of this quick, easy dish yesterday for my husband before I left. He loved it! I’m also making this one take to our friends for Easter dinner and using bacon instead since she’s serving the ham!

Note: I made a smaller version for me and my husband last night using my Pampered Chef 8 1 / 2 cup Rectangle Leakproof Glass container. It goes into the oven, to the frig or freezer, back to oven or microwave and is great to take food to potlucks! And it comes with a snap-lock lid. I have all the sizes and love these babies!! We no longer microwave food in plastic! This is the 3 cup pictured…

Lasagna Stuffed Spaghetti Squash

For anyone who’s sensitive to gluten/wheat and/or looking for a low carb alternative to pasta try this one!! We grew some Spaghetti Squash last year and only got one fruit! If at first you do not succeed try try again!!

Recipe from http://www.closetcooking.com

I’ve modified this recipe some using grass-fed beef, olive oil and I do not use LOW fat! Dr. David Perlmuttter author of ‘Grain Brain’ says our brain actually thrives on the right kinds of FAT!

Prep Time: 10 minutes Cook Time: 35 minutes Total Time: 45 minutes Servings: 4

All of the favorite lasagna flavors without all of the carbs when it is served stuffed in spaghetti squash!

This little guy is a like a ROCK to cut! I microwaved it for 5 minutes and it cut right through. Then I roasted it on my Pampered Chef large stoneware bar pan. Next time though I may just ask my friends in the produce department at Whole Foods to cut it first! ha!

MacNCheesy Muffin Appetizers

Great appetizer for your holiday list that won’t last long especially with kiddos and I mean BIG kiddos too! I’m planning to make some this weekend to take to friends to try out the recipe! I will also add my photo!

Crunchy Yummy Broccoli Salad

My good buddy at Pedernales Fellowship, Marilyn Batten, brought this to our women’s potluck recently and we were all like WOW! I love broccoli anyway but always looking for more ways to use it rather than steamed with cheese sauce if you know what I mean! So had to include this one in the Gluten Free Lady holiday recipes! Great for potlucks and your next holiday gathering!

This recipe is from http://www.allrecipes.com

Sources have said that confirmed broccoli haters have changed their minds after tasting this one! They said to make it a day ahead to let the ingredients all marry together at the party! I use Coconut Palm sugar because it has a lower glycemic index and I always use the best bacon from Whole Foods with no nitrates or all that other junk that’s in the cheaper stuff! Everything is better with bacon anyway right so we might as well use the best!

ROASTED GARLIC MUSHROOMS Modified Gluten Free

Who loves mushrooms? Try this yummy appetizer at your next holiday gathering or why not now? They’re on the good stuff list!

Often grouped with vegetables, mushrooms provide many of the nutritional attributes of produce, as well as attributes more commonly found in meat, beans or grains. Mushrooms are low in calories, fat-free, cholesterol-free and very low in sodium, yet they provide important nutrients, including selenium, potassium, riboflavin, niacin, vitamin D and more.
