Saute onions in olive oil, add in diced carrots, garlic and any kind of peppers you want, we grow all kinds in our garden, fresh oregano (use dried if you have to), Elrod’s Red Pepper Spice, other spices like cumin, garlic pepper, salt and pepper, add in the tomato paste and stir, add in the beef and brown, then add in the tomatoes, beef stock, beans and simmer for about 35 to 40 minutes.
