One of the things I really try to do is make dinner every night for my husband who works all day and works out at Camp Gladiator after work. Yeah he’s 68 and the old guy! The young guys are amazed at his strength and how fast he runs! I take good care of him! He’s been eating gluten free since I’ve been cooking this way for ten years. He even orders from the gluten free menu when we are eating away from home. Now if he eats a piece of wheat pizza which he rarely does unless that’s all there is when he’s helping someone out from our church, etc., he says he feels yucky! Of course when I get cross contamination I have a serious migraine and be throwing up so no way! That’s my gladiator Clif in the middle of those two young whippersnappers!
However truth be known, before going gluten free over ten years ago I hardly ever cooked at home. It was fast food, restaurants, chinese take out and pizza delivery. No wonder I was so chronically ill all those years!
After finding out why I was so sick for years and eliminating the gluten/wheat/and eventually the corn ingredients too, I started slowly over the years learning to cook more healthy at home. I had to literally learn how to shop more safely reading every label until I got really good at it! I became the Columbo of label reading! I also watched the cooking shows, googled recipes and learned to hack most anything gluten free.
Now I can make almost any recipe gluten free. The only thing I haven’t really tackled is stuff like pastry and cinnamon rolls but really I don’t even have much of a craving for sweets anymore like I used to all those years ago. I used to be a sweet-o-holic. Same with bread. Especially when pregnant with our two son’s who are both grown up now. Not so much any more. Every now and then I’ll make something sweet because my husband likes the sweet stuff more later after dinner. Most times I just don’t even want them. Of course sometimes I’ll grab some chocolate!
Really I used to sneak stuff at night like hostess cupcakes in the beginning when I was supposed to be eating gluten free! It took me almost two years to finally realize NO GLUTEN/WHEAT at all! Nada, zip! Sugar was making me feel horrible too. I always had hypoglycemia when I was in my twenties and thirties.
Last evening I was thinking of what to make for dinner and we had just had chicken the night before so that was out. I had some grass fed stew meat in the freezer. I didn’t have potatoes to make stew in the crock pot like I was thinking when buying it. Then beef Stroganoff on the stove popped into my head and I had all the ingredients including some left over Jovial egg noodle pasta in the box that I didn’t cook last week. It was just enough for dinner plus more for lunch the next day!
Here’s how I whipped it up-
I salt peppered the beef and sprinkled some arrowroot on. Put some olive oil and a little Kerigold butter in iron skillet. Brown on both sides, remove and set aside.
Mix some arrowroot with Lea and Perrins worchestire, Pacific gfree beef broth to make a slurry Add this to the pan and whisk, add some beef broth, sour cream, whisk to thicken, add the beef back into the skillet. Cover with foil and let simmer an hour so the meat becomes more tender. Make pasta (I boil the water, add some salt and boil it 8 minutes) and add to beef. Add to plates and sprinkle on parmesan cheese. We had this with a side salad. I made up a quick vinaigrette using red wine vinegar, dash of lemon, pure organic maple syrup, dijon mustard, Mc Cormick garlic pepper, extra virgin olive oil in a jar and shake! If it’s too lemony for you add a bit more maple syrup!
