Ingredients
- 2 Packages Fontera Gluten Free Red chili enchilada sauce or any other enchilada sauce you prefer
- 1 Carton Gluten Free Cheese Queso I buy this at Whole Foods. If you cannot find one just make your own queso.
- 1 LB ½ to 2grass-fed stew meat .
- 1 Med Onon
- 4 Cloves fresh garlic chopped
- 1 Teaspoon ground cumin
- 1 Teaspoon garlic powder
- 1 Teaspoon onion powder
- 1 Teaspoon Garlic Pepper
- 1 Teaspoon kosher salt
- 1 Cup Grated sharp White Cheddar cheese

Instructions
- Pour a little of the Fontera Gluten Free Red Chili Enchilada Sauce into the bottom of a 9 x 13 inch baking dish
- Meat
- Saute onions in iron skillet, add ground beef, add garlic cloves and spices and cook over medium heat until done. Remove from skillet with a slotted spoon and place in a bowl and set aside while preparing the sauce and tortillas.
- Pour some oil into the skillet on medium heat and add in each tortilla lightly frying about 2 seconds, don't let them crisp. Then add each one at a time into the dish and put in a little of the cheddar cheese and roll up side by side until you have all the tortillas lined into the pan.
- Preheat oven to 350 degrees
- Pour the meat and sauce over the tortillas and top with a little more of the Queso and then some more Cheddar cheese and bake for about 20 minutes until bubbly. If you like sprinkle some Cilantro over the top.
