Crispy Gluten Free Onion Rings
Just came across this recipe for crispy onion rings at an online video with Chef John and modified them Gluten Free… and I’ve left his blog link for my foodie readers! John says …”this onion rings recipe is so easy, and so amazingly crispy, you can now make up for all those years of deep-fried denial by making these at home.” Hey foodies, not sure about you but we love, love, love onion rings! And I’ve got to have them gluten free and although I’ve found places that have GFree fries, just haven’t found any restaurants or fast food places (which by the way I haven’t been to fast food places in over five years!) that make Gluten Free crispy onion rings that’s for sure! My recipe makes them ok, but they turn soggy! Not Chef John’s! Be sure to Check out his video to literally ‘hear’ how crispy these are! Ingredients
  • 1/2cup Bob Red Mills gluten-free all-purpose flour
  • 1/4cup cornstarch
  • 2tablespoons instant mashed potatoes
  • pinch bigof cayenne
  • 1cup cold club soda
  • 2-3cups Ian’s Gluten Free Panko or as neededJapanese-style breadcrumbs at Whole Foods
  • fine salt to taste
  • vegetable oil for frying
  • 2-3 yellow onionscut into 1/4-inch rings

Instructions
  1. *Note: the amounts in the video were for a smaller batch. The amounts above will make a nice large batch, enough for about 8 servings.
