cupAboutand half Pacific Beef Stock. Eyeball it to the consistency you prefer..
1 15Oz can Organic Diced Tomatoes .
1Can Cannellini Beans
Half Sweet onion
3clovesgarlic
1Roasted Jalapeno seeds removed
1 /2Roasted Pablano pepper seeds removed or I use some Limon pepper from our garden. Use whatever pepper you like.
1teaspoonpacket organic Chili mix. or I use Errols Spice from Paleface Feed store1cumin, garlic and onion powder., From Whole Foods
fresh thymeoregano
Jalapeno or Limon Pepper. Depending on how hot you like it!
Kosher salt and garlic pepper
Instructions
Saute onions in olive oil, brown pork, and beef, add in garlic and peppers, spice pack and other spices, thyme, salt and pepper, beef stock, tomatoes, beans and simmer for about 35 to 40 minutes.
Top with cheddar cheese, green onions and some organic sour cream (of course always optional).
