Gluten Free Pumpkin Protein Muffins
Use your favorite protein drink mix with these little yummies. I use gluten-free YOLI YES Vanilla Purawhey protein shake with no artificial or chemical sweeteners. Sweetened with Stevia.
Ingredients
  • oz ½ can15can Pumpkin Puree
  • cup ½applesauce
  • 2 egg whites
  • 3 scoops Protein powderI use gluten-free YOLI YES Vanilla protein shake or your favorite shake mix
  • cup ½Gluten Free Oatmeal
  • 1 ½ Teaspoons Baking powder
  • ½ Teaspoon Baking soda
  • 1tablespoon pumpkin pie spice
  • ½ Teaspoon cinnamon
  • 3 mini scoops coconut palm sugar
  • 3 mini scoops coconut palm sugar
Instructions
  1. Preheat Oven to 350 and bake 18-22 min. Stick a toothpick in to test for doneness.
