Indian Masala Omelette
I am really getting into Indian cooking ever since watching the movie ‘Today’s Special’ on Netflix about a sou chef who has aspirations to go to Paris as an apprentice to a famous chef and suddenly finds himself running his father’s Indian restaurant and he has no experience cooking Indian food. Great flick! Indian cooking is actually quite healthy and mostly grain/gluten free too so it’s right up my alley for learning! Besides, I have a passion for cooking with herbs and spices!!
Ingredients
  • 2in large eggsWe guy our pasture eggs from Amy Dawn WoodSpicewood
  • 1tbsp finely chopped onionsI picked two green onions from our garden this morning to use
  • 1tbsp finely chopped tomatoesI used two cherry tomatoes from our garden
  • leaves a hefty pinch of finely chopped cilantroI didn’t have cilantro so used some fresh chives and basil from our garden
  • in a pinch red chili powderadd more if you like it spicier, I use Elrod’s red pepper spice from Paleface Feed StoreSpicewood. I use thiseverything!
  • salt & pepperto taste
  • 1tsp light cooking oilI used coconut oil
Instructions
  1. Break the eggs in a bowl and add in all the ingredients, except oil. Beat vigorously with a fork to mix it all well.
  2. Heat a non-stick pan with the oil and pour in the egg mixture. Let it cook on one side on medium-low heat for a minute or two, before flipping the egg.
  3. Cook on the other side for another minute or so and serve warm.
  4. Pan fried pork sausage with herbs and spices. Kosher salt, garlic pepper, Erol’s red pepper spice mix, fresh chives, basil and dried rosemary from our garden. Spray coconut oil in iron skillet. Mix up sausage with herbs and spices, make into small patties, brown and then cover the pan for about 5 to 10 min until done. I pour a little bit of maple syrup on mine!
