Kale & Hummus Salad with Roasted Chicken
OMG! I’m loving Paleo and this salad is incredibly good! So healthy too! And I’m in love with Tahini now! A quick and easy meal for dinner or lunch!
Ingredients
  • 1/3cup extra virgin olive oil
  • 1clove garlicsmashed
  • 3tablespoons tahini
  • 3tablespoons fresh lemon juicefrom 1 large lemon
  • 5cups shredded Tuscan kale
  • 1/2teaspoon kosher salt
  • One 15 1/2-ounce can garbanzo beansdrained and rinsed
  • 1cup shredded rotisserie chicken breast
  • 1/2cup dried cranberries
  • Za’atar to finishoptional
Instructions
  1. Heat a small saute pan over medium heat.
  2. Add the olive oil and garlic and cook just until fragrant, 2 minutes. Allow cooling slightly.
  3. In a large bowl, whisk together the tahini and lemon juice. Gradually whisk in the garlic oil.
  4. Add the kale, salt, and chickpeas and gently toss together, bringing the dressing up from the bottom to coat everything evenly.
  5. Add the chicken and cranberries, and toss. Sprinkle with za’atar if desired.
  6. Serve.
