This muffin batter comes out more like scone dough. I baked them in my Pampered Chef nonstick brownie pan. Sprayed the pan with a bit of Olive Oil cooking spray.

I found this recipe for Lemon Chicken on the Food Network. It’s a recipe from Rao’s in New York that I’ve tweaked just a bit to our liking. He doesn’t use garlic in his but I use garlic in all my cooking so in it goes! This dish is so delicous and easy to make! Those who love lemon, garlic and chicken are gonna love it!
Flourless Gluten Free Black Bean Chocolate Cake with Butter Cream Cheese Frosting
This cake is unbelievably good! No one would even know it was flourless made with black beans unless you told them! It’s so moist, low sugar (when omiting the frosting) and packed full of protein too! So you could make into muffins or mini cupcakes and eat them un-frosted as a protein snack!
