Paleo Chocolate Glazed Doughnuts
Who doesn't like a doughnut every now and then right? To tell the truth I haven't had a doughnut in like 10 years! Regular doughnuts may taste good but are probably one of the worst foods on the planet besides pizza! Check out this delicious healthy doughnut recipe! Excited to make some of these for my taste testers this weekend. And I'm not saying a word about them being healthy, Paleo, gluten/wheat/grain free, etc. Mums the word! Will let you know the verdict! Since deciding to start eliminating all grains from my diet (because I feel so much better when not eating grains which means corn and rice in moderation), I've lost down to about 128 lbs which is the lowest weight for my body in like 35 years. I wasn't trying to lose weight, just wanting to feel better with more focus and clarity in my brain. Consequently, my stomach has really shrunk though! I've actually maintained my weight for over five years just eliminating gluten/wheat. I was always 25 to 30 lbs heavier in the past before eliminating gluten/wheat and had that fat wheat belly. Every now and then I eat too much corn and/or rice within a few weeks and can tell a huge difference in how I'm feeling. More foggy brain, more stomach issues, headaches, fatigue, some joint pain.. so off I go again.. how about you? Do grains affect you in any negative way? Keep a food diary and listen to your body. It will tell you how it feels.. meanwhile, have a healthy doughnut and feel the difference in this one and a Krispy Kreme!

Ingredients
  • Batter
  • 1 cup Bob Red Mills almond flour
  • 1/2 cup + 2 tbspBob Red Mills coconut flour
  • 2 pasteurized eggs
  • 1 tsp heapingreal vanilla
  • 1/4 cup honey
  • 1/2 cup water or coconut water
  • 1/2 cup plus 2 tbsp almond milk/coconut milk original
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • olive oil spray
  • doughnut pan I bought two nonstick pans at Target for about $11.00 each
  • Chocolate Glaze:
  • 1/2 bag Enjoy Life melted chocolate chips they are gluten-free
  • 2 tbsp melted coconut oil
  • in Mix ingredients togethersmall bowl and dip the top of cooled doughnuts into chocolate glaze
  • Cinnamon Sugar:
  • 1/4 cup coconut palm sugar
  • 1 tbsp cinnamon
  • 1/2 cup melted coconut oil

Instructions
  1. Preheat oven to 350
  2. Mix wet ingredients in small bowl (eggs, vanilla, honey, water, milk)
  3. Mix dry ingredients in a bowl (almond flour, coconut flour, salt, baking soda)
  4. Combine wet and dry ingredients
  5. Stir until there are no lumps
  6. Grease doughnut pan with olive oil spray
  7. Spoon batter into a large plastic bag and cut a tip (makes it into a pastry bag)
  8. Squeeze batter from the bag in a neat circle into doughnut pan
  9. Bake for 18 minutes or until the top and edges are brown.
  10. Mix coconut palm sugar and cinnamon on a small plate
  11. Pour melted coconut oil onto a small plate
  12. Dip top of cooled doughnuts into the oil and then into cinnamon sugar mixture.
