Paleo Peanut Butter Fudge Cups
These little paleo peanut butter fudge cups really hit the spot! They taste just like a peanut butter cup only made with much healthier ingredients and there's only five that you most likely already have in your pantry. They take about 5 minutes to make! Even the busiest of moms can whip these up for a healthy sweet treat!!

Ingredients
  • 1 / 2 cup coconut oil
  • 1 / 2 cup high-quality cocoa powder
  • 1 / 2 cup smooth almond or peanut butter. I used Justin's peanut butter and it has honey in it so I cut down on the Maple Syrup
  • 1 / 4 cup raw honey or maple syrup
  • 1 / 2 teaspoon vanilla

Instructions
  1. Melt coconut oil. Blend all ingredients together in a food processor or blender until smooth. I used my Ninja blender. Pour into small paper-lined muffin tin cups and fill about a half inch full.
  2. Chill for 30 minutes or freeze for 10 minutes. When firm remove. Store in sealed container in frig or freezer.
