Strawberry Shortcake for Two pssst.. it's been Hacked!
I used my food processor for this recipe but you could use two knives or your finger tools to break up the butter into the flour. These short cakes are perfect for two and they are so tasty with a touch of sweet! Don't forget the whipped cream! I whip up my own using heavy cream, tablespoon of sugar and a dash of vanilla! Be careful when whipping up cream because if you whip it for too long it will break! This would made a great date night dessert or for the special valentine on your heart!

Ingredients
  • 2/3 Cups strawberries hulled and halved
  • 3 Tablespoons Organic cane sugar or use coconut sugar Divided
  • 1 Cup gluten free flour I used GF Jules GFree flour this time. I also use Bob Red Mills 1 To 1 GFree baking flour
  • 1 Teaspoon baking powder
  • 1/2 Teaspoon salt
  • 2 Tablespoons cold butter I use Kerigold from grass fed cows, cut into small cubes
  • 5 Tablespoons milk For dairy free, I use either almond, coconut or almond/coconut halfnhalf. I used the halfnhalf this time

Instructions
  1. Preheat oven to 450 degrees F
  2. Mix the sliced berries with 1 tablespoon of the sugar. For this time I used some of my dried stevia from the plants we grow in the spring. But you can use cane or coconut sugar whatever floats your boat!
  3. In food processor mix the flour, salt, baking powder and 2 tablespoons of the sugar. Pulse the butter into the dry ingredients until it breaks up and resembles crumbs. Add in the milk and pulse until the dough pulls away from the side of mixer, which just takes a few pulses. Carefully pull the dough away from the blade, divide in half and shape each half into a circle, patting it to about 1/2 inch thickness.
  4. Bake at 450 degrees on a Silpat or parchment paper for about 10 to 12 minutes or until golden brown. Mine took a few more minutes. Let cool slightly before covering with strawberries and whipped cream!
Recipe Notes

GF Jules Gluten Free Flour (great for taste, texture.  I love this one.  It does however contain organic non GMO corn)

 I use this gluten free flour too!  It's available in most grocers.  It already contains xanthan gum.
