Summer Time Potato Salad
There’s nothing like potato salad in the summer right?! This one is super tasty! My family loves it! Especially with barbeque chicken on the grill! YUM! You hungry yet?! Enjoy!
Ingredients
  • 10 or 12 White or Red potatoes
  • 3 Farm Fresh Eggs
  • 2 stalks Celery chopped
  • 1/2 Sweet Valdalia Onion chopped
Instructions
  1. Add as many Sweet Pickles as you like! (I usually add about 8 chopped up) and then pour in about a tablespoon of the pickle juice.
  2. About 2 Tablespoons of Yellow Mustard
  3. A squeeze of Dijon Mustard
  4. About a cup of Hellmann’s Mayo (I used some homemade Paleo Mayo I made this time)
  5. Whats-its-here sauce (that’s Worsheshire for you east coast folks!)
  6. 1 Teaspoon powdered Stevia (I also add in some of my dried Stevia plants!) (Plant Stevia plants in spring. Cut the stems and leaves, tie them with string and hang upside down in a dry place for a few days. Rub off the leaves from the steams on to some paper towels, crunch it all up fine and put in clean jars. Great for teas, coffee, cooking and potato salad!)
  7. Sea Salt (you decide)
  8. Garlic Pepper (about a teaspoon)
  9. Paprika on top!
  10. I boil my potatoes and eggs together.
  11. After cooled mash it up and add all your ingredients and stir in!
