Zucchini Pasta (Whole Living, Aug 2011)
Another delicious and healthy way to use the Zucchini and tomatoes from the garden!
Ingredients
  • 8oz cherry tomatoessliced
  • 1clove garlicthinly sliced
  • 1/4cup chopped raw walnuts
  • 2leaves Tbsp torn fresh basilplusfor garnish
  • 2 Tbsp EVOOplus more for drizzling (olive oil)
  • sea salt
  • 1slices zucchinithinly sliced lengthwise,cut into 1/4-inch-long strips
  • *and I added some shaved Parmesan cheese!
  • 2leaves Tbsp torn fresh basilplusfor garnish
  • 2 Tbsp EVOOplus more for drizzling (olive oil)

  • 1slices zucchinithinly sliced lengthwise,cut into 1/4-inch-long strips
  • *and I added some shaved Parmesan cheese!
Instructions
  1. In a bowl, combine tomatoes, garlic, walnuts, basil, and oil. Season with salt. Let stand 20 minutes. Toss with zucchini and garnish with basil.
  2. Simple, fresh and delicious. Experiment with how to cut your zucchini, and use the vegetable peeler for nice thin ribbons, or the matchstick type cuts for a different texture. If you don’t have cherry tomatoes it’s easy to make this salad your own and use what you like and have on hand. We have a ton of cherry tomatoes this year! Peppers would be a good addition, as well as lemon juice or maybe balsamic vinegar.
