Faux Tater Salad
Cauliflower tater salad. Paleo, grain free Recipe from Primal Kitchen Can you believe this is cauliflower? My friend couldn't! I took this to her and said what do you think this is and she sais potatoe salad? I said think again! It's cauliflower and it taste just like potatoe salad! She agreed and loved it! So good you will never miss the potatoes!

Ingredients
  • 2 in Large Heads Cauliflower (I tried it with one and it was too spoupy so added another one putfrig for a few hours and it was awesome and very good!)
  • 1 1 / 2 Cups Primal Mayo or use Hellmann's if you don't have the Primal mayo below
  • 1 / 2 cup sour cream from grass fed cows
  • 3 Tablespoons Dijon Mustard
  • 2 Tablespoons Garlic Powder or Garlic Pepper
  • 2 Tablespoons Almond Milk
  • 1 / 4 sea salt
  • 6 in Hard Boiled Pasture egg whites I'm using the whole eggsmine
  • 2 Celery Stalks
  • 1 Cup sliced red onion
  • 3 Tablespoons Coconut Vinegar or Apple Cider
  • 2 Tablespoons Fresh Dill
  • 2 Tablespoons fresh Chives
  • 2 Tablespoons Parsley

Instructions
  1. Steam chopped cauliflower just enough to still have a bit of bite to it. You don’t want it too soft. Drain and let cool
  2. While cauliflower is steaming dice/cut veggies. Once cauliflower is ready take 2 cups and place into blender. Place remaining cauliflower in bowl. Blend cauliflower, mayo, sour cream, almond milk, garlic and salt. It’s ok if mixture is lumpy. Add in diced onion, vinegar, fresh dill, parsley, chives, egg whites and toss together. Pour the mixture from the blender into the bowl and gently mix all together. Garnish with some parsley or dill if desired.
