- 3 cups minus 2 tablespoons gluten/wheat free flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- pinch Heavyof salt
- Dash of Nutmeg
- 1 cup powdered Stevia from Sugar in the Raw at HEB. It has 0 calories and is great for Diabetics and it tastes great
- 1/2 cup coconut oil
- 1 Free Range egg
- 1 cup generousplain unflavored yogurt (I added a little extra because this batter seems a bit dry, but the muffins come out amazing!
- 2 cups fresh blueberries or try them with cranberries!
- 1 Tablespoon Vanilla Extract
- Olive Oil Spray for small non-stick muffin tin

- Preheat oven to 385 degrees. In a large bowl sift flour, baking soda, nutmeg, baking powder, and salt. Set aside.
- In another large bowl whisk together sugar, oil, a capful of vanilla, egg, and yogurt. Add the dry ingredients and stir to a count of 10. The batter is pretty thick so don’t panic. In fact, on the second batch, I just made I added in about 1/2 cup more of the yogurt and the batter came out just right. It's almost like a scone batter! I made them in my Kitchen Aid mixture this time too.
- Add blueberries, reserving 1/2 cup, to the mixture and stir 3 times.
- Add mixture to well-buttered muffin pans. Sprinkle remaining berries on top and press down lightly. Sprinkle some Stevia sugar over top. I use my Pampered Chef ice cream scoop to fill the muffin tins. It scoops out the perfect size for these little muffins!
- Bake 20 to 25 minutes and allow to cool completely. Mine were baked perfectly at 25 minutes in an Electric Oven.
