Scalloped Potatoes and Ham
I had my women’s group last evening so made a smaller version of this quick, easy dish yesterday for my husband before I left. He loved it! I’m also making this one take to our friends for Easter dinner and using bacon instead since she’s serving the ham!
Note: I made a smaller version for me and my husband last night using my Pampered Chef 8 1 / 2 cup Rectangle Leakproof Glass container. It goes into the oven, to the frig or freezer, back to oven or microwave and is great to take food to potlucks! And it comes with a snap-lock lid. I have all the sizes and love these babies!! We no longer microwave food in plastic! This is the 3 cup pictured…
Mocha Chocolate Trifle Mousse
OMG! Cannot even express to you how incredible this dessert is!! No time for dieting now gang! You’re gonna win some fans over with this one! Who doesn’t like chocolate, strawberries, and Kahlua? This is very easy and quick to make too and so so good! Was a big hit at the potluck!
Tools: Kitchen Aid Mixer or regular mixer, Pampered Chef measuring bowls (they sure do come in handy to put ingredients in to save time), Pampered Chef glass Trifle Bowl. If you don’t have one you can do half this recipe and make it in a springform pan and keep it in the frig overnight to set up even more like a cake.) I’ve made this dessert both in a springform pan and as in my Pampered Chef Trifle bowl.
Kale, Greens & Artichoke Dip with Salmon
I bought some black bean nacho chips (made with rice, NO corn, vegan, gluten-free) at Whole Foods that were delicious with this yummy dip! It’s even just as good on the side as a vegetable dish with no chips! Hey, it’s also a great way to get the kids (AND ADULTS too) to eat their greens! Just don’t tell anyone it’s good for them! ha!
Note: I used a small can of Salmon today when making this dip for some added protein to take to my women’s group tonight. Plus two green onions with tops from our garden. I used red organic Kale from Whole Foods and added about ¼ cup of Monterey Jack cheese. I didn’t have any more Artichokes for it this time, however. I did not put any salt in this time because the salmon and parmesan cheese are both salty. It’s perfectly delicious even before putting it in the oven!!! And the red kale makes it pop in my new red Pampered Chef covered baker!
Fruity Crisp
I whipped this up last night and it was so yummy and healthy too! I had some fruit that we didn’t eat before so stored it in one of my Pampered Chef glass 3 cup bowls!
