Crock Pot Salsa Chicken

Came across this recipe on Facebook. It looks delicious! So I’m sharing it with a few modifications! According to Dr. David Perlmutter in his book ‘Grain Brain’ FAT is actually good for our brain!

I’ve never bought low-fat products and have not had any trouble with my weight going up and down in the last five years since going gluten/wheat free! I don’t do this because it’s a fad. I do it because it’s saved my life! If you are experiencing health issues such as migraines, headaches, joint pain, foggy brain, memory loss, thyroid issues, diabetes, fibromyalgia, arthritis, weight gain, hard to lose weight, belly fat, skin issues, etc, and you are just fed up with it all and need some advice in this area contact me!

Lemon-Buttered Stuffed Sole Roll-Ups!

This lemon buttered Sole fish is a snap to prepare! It’s affordable, healthy, quick and very tasty! Makes a great appetizer too!

For two people I use four slices of Sole. I usually buy about a pound and freeze the rest for later.

I lay the sole out on my Pampered Chef Stoneware Bar Pan. I absolutely love baking everything on their stoneware! I’ve used their stone cookware for over 22 years. This is a new one and I’m breaking it in nicely. It’s already getting seasoned up pretty quickly!

Gluten Free Lady Chef Fried Pickles With Dipping Sauce

A great appetizer for the holidays! Some people just can’t get enough of these! Like me!

Pickles

Thanks to my friend Shelli for this tip! Drain the pickles on a paper towel first to get out excess juice. Soak pickles in some buttermilk. Depending on how many pickles you’re frying. Just put enough to cover them and let them sit for about 30 minutes or so. Next time I’m trying them in a beer batter!
