This lemon buttered Sole fish is a snap to prepare! It's affordable, healthy, quick and very tasty! Makes a great appetizer too!
For two people I use four slices of Sole. I usually buy about a pound and freeze the rest for later.
I lay the sole out on my Pampered Chef Stoneware Bar Pan. I absolutely love baking everything on their stoneware! I've used their stone cookware for over 22 years. This is a new one and I'm breaking it in nicely. It's already getting seasoned up pretty quickly!

Ingredients
- slice Dab two slices of grass-fed butter on eachof fish salt, and pepper them. Add some lemon zest to each slice. Place a few pieces of fresh spinach, Swiss Chard, or kale on eachand roll them up.
