Best Ever Gluten Free Peach Cobbler

 

Made this incredible peach cobbler yesterday! Homemade pie crust on bottom and top!  So my hubby had to go for a vanilla ice cream run last evening! He’s the best! So was this cobbler! No one would even guess it’s gluten free! No card board here yal’L!! Its just that yummy!! Crust is incredible!

Ingredients for two pie crust:

2 1/2 cups Bob Red Mills 1 To 1 Gluten Free Baking flour 

1 teaspoon salt
2 sticks cold butter
1 Tablespoon coconut sugar
1 Tablespoon gluten free vodka or tequila (really makes the crust better and flakier!) but if you don’t have it just use cold water.
4 Tablespoons cold water

First I Pulsed 1 1/2 cup flour with sugar and salt, add all the butter and pulsed into paste like, add in last 1 cup flour and continue pulse. Add vodka or tequila, then 4 TB cold water Pulse. Dump onto floured saran wrap, form into ball, put in Frig 1 hour.
Cut dough in half and roll out the bottom section, then put into your dish, add the peaches, then add on the top. If it tears so what, just dab it on, it’s a cobbler and it’s rustic and so is this recipe!

Ingredients for Peaches:
6 peaches peeled and sliced up
3 Tablespoons butter
4 Tablespoons coconut sugar
Squeeze half lemon
2 teaspoons cinnamon
1/4 teaspoon pumpkin pie spice
About a cup of water

2 Tablespoons of your gluten free flour, mix with water to form a paste to thicken up peaches.

Heat over med low until thick about 20 min.
