Homemade Gluten Free Egg Noodles

INGREDIENTS:

1 cup gluten-free flour mix I used my old standby, Bob Red Mills 1 To 1 Gluten Free Baking flour 
2 teaspoons gluten free xanthan gum
1/2 teaspoon salt
1 Tablespoon olive oil
2 pasture eggs slightly beaten

INSTRUCTIONS:

Mix all ingredients together until it forms a dough ball.

Take the dough ball out and place it on a hard surface dusted with more of the GF flour mix.

Roll out with a rolling pin.

Roll it VERY THIN!

Cut it into noodle ribbons using your pizza cutter.

Add to pot of boiling, salted water and cooked them for approximately 3 minutes.

Drain them in a colander and rinse them with cold water to stop the cooking process.

Enjoy with your favorite pasta sauce or in my famous chicken soup recipe!
